What I make is NOT something that you would ever see cooked in Italy - even though I may give it the same name.

I love your details about the authentic version! Such a simple thing to make. I can easily see it in a tortilla, although I've just used it as a side. What sort of ratio of beans to rice is right? Should there be more rice than beans?Janicehttps://www.blogger.com/profile/03611246748000772620noreply@blogger.comtag:blogger.com,1999:blog-7156136835299458536.post-45853292819539074432012-05-14T11:46:12.472-07:002012-05-14T11:46:12.472-07:00This comment has been removed by the author.Janicehttps://www.blogger.com/profile/03611246748000772620noreply@blogger.comtag:blogger.com,1999:blog-7156136835299458536.post-91333086972361542852012-05-14T11:37:28.195-07:002012-05-14T11:37:28.195-07:00Gallo Pinto is a Nicaraguan dish. The onions are sauteed first in a neutral oil, then the cooked beans are added and lastly the cooked rice. You continue stirring until it is well blended. It is served usually for breakfast with eggs, fresh tortillas and cheese but it can be eaten at any time of day. No jalapenos or peppers are added but it is a personal choice to add hot sauce. The fast version would be to use canned beans, which are added to the rice while it is cooking, but it does not taste the same.
